Summertime. It’s really hot. Summertime also means grilling out a lot (at least in my house it does). Burgers, hot dogs, pork chops, veggies, fish, etc. So how about a crisp, smoky, cool salad to go along with those juicy burgers? Instead of the ole stand by of corn on the cob… This is super simple. You just need to grill some stuff, chop some stuff and the put it all together. And it’s even good leftover. Butter. Always with the butter. Oh yeah…that’s what we’re going for Oh look! A-vo-ca-do
- 4 Ears of Sweet Corn
- 1 Vidalia Onion (sliced into thick discs)
- 1/2 large avocado (diced)
- Juice of 1/2 Lime
- Small Palmful of Cilantro (minced)
- 1/2 small jalepeno (de-seeded & diced) – Optional
- 1/2 tsp smoked paprika
- Salt & Pepper to taste
- 2-3 Tbsp softened butter
- Smear corn and onion with softened butter
- Wrap corn in foil
- Grill corn and onions over med-high heat for 10-15 minutes. Rotating and flipping often.
- Slice kernels off the cob into a large bowl
- Dice onion, toss into bowl
- Add remaining ingredients, stir to combine.
Mmmmmm I really dig this. It has a nice smokey flavor. The lime juice goes really well with the sweet corn and onion. Try it, you may be surprised!

Gaaah deliicous. I bet the lime juice just finishes it off nicely. I’d have a hard time not devouring that perfectly grilled corn right off the cob.
