We might have a slight obsession with lavender filled recipes lately. It’s long been a favorite scent around our house (anyone else totally in love with the lemon lavender Yankee Candle scent?) and since handing out saches filled with French lavender at our wedding, this plant has held a special place for us. We planted two French lavender bushes in our front yard; one has survived 5 winters so far and is slowly engulfing that entire flower bed. So we try to find ways to use the fresh buds when it blooms. Sadly though when we went to pick some lavender for a batch of easy lemon lavender pancakes using Krusteaz mix, we found buds that weren’t quite blooming yet. Luckily we found a bag of French culinary grade lavender for sale at our local World Market, so these bad boys happened just a day later!
Loving that Krusteaz mixes make it so easy to whip up a delicious stack of pancakes or waffles on the weekend without having to put much effort into it. As much as we enjoy making things from scratch, these days knowing a special weekend breakfast can still happen with a little help from a boxed mix is a huge relief. We’ve used their muffin mixes for years and swear that their waffle mix tastes just as good as Remington’s homemade recipe!
Krusteaz has just launched a new line of pancake mix with added protein too. Each serving has 13g of protein and is free of partially hydrogenated oils, high fructose corn syrup, artificial flavors, colors, and preservatives. This was our first time trying out the new protein packed buttermilk pancake mix and we decided to amp them up a bit in flavor by tossing in lemon zest and fresh lavender. We’ve found that adding a splash of flavoring or a dash of spice or citrus can turn a boxed mix pancake into something really special with no effort. It’s a great way to experiment with different flavors.
We’ve also been known to warm maple syrup on the stove with a couple pats of butter instead of just chugging it straight out of the jar. This time around, with fresh blackberries on hand, we quickly pulled together a homemade blackberry honey syrup. All you need are fresh or frozen blackberries, honey, sugar, and water!
I don’t know about you, but for me, my favorite part of a stack of pancakes or waffles might just be the whipped cream on top. Since I’m still avoiding dairy for baby Asher, I made a batch of coconut whipped cream using maple syrup as the sweetener and loaded it on top of these pancakes. This is totally optional, of course, for you.
The new Krusteaz mix bakes up thick and fluffy, a trademark characteristic we’ve come to expect from their delicious mixes. The added protein does not seem to alter the flavor or the texture much at all. We noticed these were a tad thicker than their original mix, but they also left us feeling full and satisfied, ready for a day of running weekend errands. The hints of lemon and lavender in the pancakes were crazy delicious and that blackberry syrup paired so well with those flavors. These pancakes were a home run.
You can use this recipe with your favorite Krusteaz pancake mix or use your favorite recipe from scratch by just tossing in the added lemon zest and lavender.

Lemon Lavender Pancakes with Blackberry Syrup
Ingredients
- 2 cups pancake mix
- zest of two large organic lemon
- 2 Tbsp fresh lavender
- 8 oz fresh or frozen blackberries thawed if frozen
- 2 Tbsp sugar
- 2 Tbsp honey
- 1/4 cup water
Instructions
- Add lemon zest and lavender to pancake mix and follow instructions on the box to make pancakes.
- In a medium saucepan, bring the blackberries, sugar, honey, and water to a boil. Reduce heat and simmer until berries are falling apart and sauce has thickened just a bit, 20 to 25 minutes.
- Strain the sauce through a fine mesh sieve, pushing to extract all of the liquid from the berries. Transfer to the refrigerator; sauce will thicken as it chills. Store in an airtight container in the refrigerator for up to two weeks.
