Oatmeal is one of those comfort classic breakfasts that is a go to in our household on Sunday mornings when we are fresh out of eggs or on mornings when we get up super early to head to the mountains for a day of hiking! It is hearty, stick to your ribs kind of food. A meal that gets you squarely to lunch with plenty of lasting quality carb energy.
Usually, we serve it up sweet with fresh fruit, nuts, brown sugar and a hit of warm spices. That was our method of choice – that is until we discovered the world of savory oats. How had we not entered this land before? How had we not known the wonders of delicious savory oatmeal? I love savory breakfast foods and 9 times out of 10 prefer them over something super sweet like pancakes or french toast early in the day. We mix all kinds of savory goodness with grits here in the south, so why the heck not oatmeal? This was uncharted territory for some unknown reason. But by golly we have landed on something outstanding! It is comforting, filling, savory, salty, delicious goodness in a bowl. And it’s couldn’t be simpler to boot!
Makes two servings.
Ingredients
- 1 cup oatmeal (steel cut or regular)
- 2 sausage patties, crisped up and chopped
- 2 stalks green onion
- 2 tbsp shredded cheddar
- handful of spinach
- 2 eggs, fried over easy
- 1/2 avocado
Instructions
Cook oatmeal according to package directions, salt and pepper to taste.
Stir in sausage, 1/2 green onion, cheese and spinach just until cheese is melted and spinach is slightly wilted.
Spoon into bowls, top with fried egg, avocado and remaining green onion.
