One of my favorite summer salads of all time is a spinach and kale salad chock full of healthy and fresh ingredients, like strawberries, avocado, cucumber and feta cheese. I like to top mine with a serving of simply grilled chicken breast for a punch of protein, but that’s completely optional. This salad can totally stand on it’s own without the chicken and be satisfying for lunch or dinner!
Top this salad with my creamy strawberry basil balsamic dressing or a simple balsamic olive oil vinaigrette, but it’s SO GOOD with the homemade strawberry dressing!
