I love strawberry season, but growing up I hated the juicy tart red berries. I thought they were too bitter, too tart, too something. I must have been out of my mind because I can’t get enough of them now. At some point it switched and I had to have all the strawberries!
They are the best though when they are in season – they taste SO GOOD! Sweet, juicy, bright and yummy. I love to eat them sliced up on spinach or arugula salads with grilled chicken and nuts. Then I got to thinking…why not make a creamy strawberry dressing to amp up the flavor even more? So here’s my recipe for a skinny strawberry basil balsamic vinaigrette! It uses strawberry Greek yogurt or you can substitute some of the delicious strawberry quark for an even creamier texture…
Ingredients
- 10 small-medium fresh strawberries
- 1/4 cup + 2 Tbsp balsamic
- 1/2 cup strawberry greek yogurt or quark*
- 1 tsp extra virgin olive oil
- 15 small-med basil leaves
- 2 tbsp red onion, diced
- Juice of 1 lemon
- salt & pepper
Instructions
Combine all ingredients in blender and blend until smooth and creamy. Store in a air-tight jar or container in the fridge and stir/shake before each use.
*You could also substitute plain greek yogurt or plain quark, but you will want to increase the number of strawberries used to amp up the flavor.
